Hump Day Treat: Bananarama Bread

Do you ever need an excuse to eat banana bread? I don’t. I like to neglect bananas in the hopes that someone will see them and say, “Oh, we should make banana bread with those!” That hasn’t happened yet, so this week, I had to take matters into my own hands.

This recipe comes from the new issue of Cooking Light, and it’s actually a reader-submitted recipe. Ah, maybe one day I will grace those pages with a recipe of my own! Until then, though, I’m happy to make other people’s tried-and-true delicious favorites. (A big thanks to Eileen in Montana!)

If you’re dying to make banana bread and you don’t have overripe bananas, here’s a trick: use fronanas! Frozen bananas left to thaw in the fridge are perfect for using in banana recipes. (I didn’t thaw enough for this, so I used half a cup of mashed and half a cup of frozen-thawed-mashed, and it worked just fine!)

At first I was feeling lazy and thought this recipe would be a big ordeal, but it’s actually pretty simple. Just two bowls and no electric mixer to clean up! Bonus points!!

Ingredients

3/4 cup whole wheat flour

3/4 cup all purpose flour

1/4 cup flaxseed meal

1 tsp baking powder

1/2 tsp salt

1/2 tsp baking soda

1 cup mashed ripe banana

1/2 cup chopped walnuts (The other night, my mom cleaned our freezer and found big bags of frozen whole pecans and frozen whole walnuts. Who knew?! We thawed them and had, as she eloquently put it, “a shit ton,” so I made her get cracking and that’s what I used in this recipe.)

3/4 cup sugar

1/2 cup plain low-fat yogurt

1/4 cup canola oil

Cooking spray

Method

Preheat the oven to 325 degrees.

Combine whole wheat and all-purpose flour.

Add baking soda, baking powder, flaxseed meal, and salt, and stir with a fork. This is the flaxseed meal I used; I found it in the “healthy baking” section at Kroger; I see this brand pretty much everywhere though!

It was at this point I also realized I had no baking soda. What household in America does not have baking soda at any given time!? Turns out you can substitute baking powder. Use three times the baking powder as baking soda is called for. (In this case, 1.5 tsp baking powder.)

Mash the bananas in a separate bowl add the walnuts, yogurt, oil, and sugar.

Stir to combine!

Add to the flour mixture, stirring until just moist. (Sorry! Hate that word!!!!)

Spray a 9 x 5 inch loaf pan with cooking spray and drop it like it’s hot into the pan.

Bake for 75 minutes, or until a wooden toothpick inserted in the center comes out clean.

Cool for 10 minutes in the pan, then transfer to a wire rack and remove from pan to cool completely.

Slice into 12 pieces. (Each slice has 212 calories, 9.2 grams fat [0.8 saturated], 4.3 g protein, 30.4 g carbs, and 2.6 g fiber.)

Stop torturing yourself and eat up while it’s still warm!


Hell to the YUM. It’s less greasy than regular banana bread, but still perfectly moist. (AHHH! STOP ME!!!!) While banana bread is a great snack, I had it for breakfast instead of my usual English muffin. Topped it with a little Smart Balance light and ate it with a chocolate banana smoothie…it was a good, good morning.

Feeling Classy: Pilates

Good afternoon! I am just sitting down after a very busy morning.

Last night, I was a good girl and in bed at 10:30; I tried to stay up working on an article, but I was too tired and out of it. But today I woke up so refreshed at 7 AM. I also looked a million times better; at first I wondered if it was my new moisturizer, but then I realized that’s what happens when you get enough sleep!

I was out the door at 8:00 so I could start off on the right foot with my new goals. Today’s plan was doing some type of cross-training cardio before the mat pilates class at 9 AM. I am glad I decided to add a fifth day of cross-training to my workout schedule. It means I get to wear my old Nikes once in a while! Plus, it just keeps things interesting. For today’s cross training, I decided to have a make-up session with my old flame the elliptical. I turned on La Roux (my obsession for this album is just full-blown) and worked it for 25 minutes. Although running is high energy, it can be kind of too spiritual at times, if that makes sense. It’s nice to zone out, but sometimes I miss cranking along to high-energy pop music! The elliptical got the job done.

Then I cleaned up and hit my first pilates class at Genesys. There were about nine people in the class, and everyone was getting mats, a ring, weighted balls, and dumbells. The class was dark, which was nice. The instructor turned on “Seasons of Love” from “Rent,” and I just had a great feeling about things!

The class was great — just what my routine needs. We did mostly traditional pilates moves, but I forgot how tough/amazing pilates is! I wasn’t dying, but it was a good reminder of how much work I have to do on my flexibility and core strength. And I know Pilates and yoga are often grouped together, but I like Pilates so much better. Yes, it’s slow, but it’s also energizing. The moves are tough, but there aren’t many reps, and they seriously work. And for me, they are more enjoyable than doing traditional squats and lunges. It’s amazing the kind of results you can get from such little movements. We did abs, lower body, and upper body, lots of stretching throughout, and then a little cool down. What a great 60 minutes! I am excited to go back on Friday.

It was so exciting to have cardio and an hour of strength training done by 10 AM. That feeling alone is enough to make me a morning person again!

After that, I hit the bank and then the mall to stick with my next goal and put a hefty sum toward a credit card bill. I have to do it without thinking about it. If I thought about, I’d get depressed, so now I just try to pay before I even realize I have money. But I did treat myself to two new bottles of OPI nail polish. They finally have the new matte line here, so I am really pumped to use it. I love good nail polish. As I was walking out and loving how cool and blustery it was, I realized it was the perfect time to get the treat I’ve been wanting for the past month: a pumpkin latte! I have been wanting one, but I am never near a Starbucks when it’s a good time for caffeine/a snack. Today I was hungry and it was early…the stars obviously just aligned.

I got a tall soy latte with one pump of pumpkin! One pump isn’t enough to do major damage, but its enough to give you that yummy fall flavor. It was so good. This might be a weekly Pilates reward!

Then I got my eyebrows waxed, which is always awesome. They were kind of ridiculous, but it’s more fun when you have major growth, because then it’s even more exciting when they are cleaned up! Plus the woman who does them is amazing, so I left feeling even more upbeat after our chat.

My day was going so well, I almost wanted to go to Target to just be the Happiest Person Ever, but I knew it was a bad idea. Instead I stopped at the grocery store for some apples, and drove through Wendy’s to get chili — something a little different! I didn’t realize their small chili is only $1.05. And you say you can’t afford to eat healthy…

I came home and had the chili with a wrap with peppers, hummus, onions, salsa, and lettuce and veggies on the side.

And I finished up with a new Macintosh apple! I usually stick with green, but I figured I should live dangerously.

This afternoon I have to finish an article, work on some fun blog-related projects, and make dinner. Hopefully there will be time to break into my new “Glamour,” as tonight I’ll be busy watching “Modern Family” and “Eastwick.”

New Month, New Goals: October

October and August are my favorite months of the year. Why does Bitchtember have to get in the middle of things!?

I knew my test was going to turn September into a very dull, stressful month, and it totally did. The only thing that kept me going was my love for October. I love everything about it! On this, the last day hath September, I am so excited about post my new — and hopefully more fun– goals for October. Here’s what’s going on the Vision Board this month.

Replace my two weekly strength training sessions with two weekly Pilates sessions. Yeee-haw! This is going to be my toughest goal. I love Pilates and I know it does amazing things for my body. But I’m bad about sticking with it — I know it’s hard, but it’s not the same as cardio hard. Um, we just lie there? Really? But my back is getting really sore from running, and I know that strengthening and stretching my core and lower body is exactly what I need. I am going to attend a 60-minute class at the gym twice a week. (Depending on the class, I may need to do a little upper body work immediately following it.) Biggest barrier: the class is at 9 AM and I if want to do my run first (Pilates feels SO GOOD after running), I need to be at the gym by 8:00. Not a huge deal (that’s why I’m up right now!), but it means going to bed earlier…which means less g-chatting on Tuesday and Thursday nights. It also means I did not see last night’s episode of “The City” during which Olivia Palermo “got my old job” at Elle. Sigh. Reward: less pain; better posture; confidence; more toned legs on Pantlesss All Hollow’s Eve; better flex(sex)ibility.

Make sure my long run and at least one other run each week happen outside. The weather is cooler, so it’s great for running, and I need to not get spoiled on the track or used to the treadmill. Now that I’ve discovered the trails and I have my pimped out shoe sensor and belt, I should be all set. Biggest barrier: not planning ahead and checking the weather. Reward: better endurance, better ass. (Hills!)

Stick with my budget and my spend/save/bill pay schedule. I broke it down in my planner so I know exactly what money needs to go where and when. I’m opening a new savings account tomorrow and I’ve got Suze Orman grinning at me from the VB. Biggest barrier: Target. Reward: better credit; money in the bank for my East Coast trip in November.

Spend 20 minutes, three times a week networking and hunting for new writing/consulting opportunities. Now that I have the time to actually take them on, I need to actually take more on! Biggest barrier: forgetting. Reward: new opportunities; getting to spend more time on Craigslist.

Also, my fish-twice-weekly goal is still in effect, as is my no-boy-drama goal. Both of those are going just swimmingly, and are definitely worth keeping!

All I really want to do is spend the next month appreciating the fact that October is 31 days of awesome. I just want to love every single day for what it is, since it only comes once a year. I’m already a little giddy about it! Luckily, my mom appreciates it as much as I do, so we’re making big plans. We are having a Halloween party on the 30th, so I am going to be in a full-out Martha frenzy. This weekend we are having a meeting of the Party Planning Committee (which I am chairing) and the Costume Committee (which my mom is chairing). I’m so excited!!
