TGITFBH!

Thank goodness it’s the Friday before Halloween!

AHHHHHHH!

Yesterday was quite packed for me. I was up at 7:00, on the road at 8:00, and was knocking out errands before I even had time to think about it! I hit Trader Joe’s (which is a 45 minute drive), got waxed (a fun/not fun at all time, per usual), and worked on party stuff for hours. Thank goodness dinner was in the crock pot (black bean casserole!) so I didn’t have to worry about that. But in the meantime, a hurricane took over the kitchen. Costume stuff and frosting everywhere! One of the things I was working on was this cute pumpkin carrot cake.

It’s a carrot cake baked in a bundt pan, iced with orange buttercream frosting, and topped with a green cupcake! Bundt cakes take about 40 minutes to cook, so while it was in the oven, I went and banged out a 3-mile run as fast as I could. I present this as evidence that I’m going to make an awesome wife someday.

Besides the cake, I also made my vegan chocolate peanut butter cupcakes with a fall twist!

In between whipping frosting from scratch, I was also kneading three loaves of beer bread, beating eggs and butter for more butterscotch pumpkin cookies, and spooning out about 100 mac and cheese bites. (And, of course, LOL-ing my way through “The Office.”) There was flour everywhere and no clean measuring cups. My mom was making her costume and making her own cookies, and my grandma was finishing my costume. It was just an all-hands-on-deck, full speed ahead kind of a night!

Finally, at 11:30, I finished the dishes and pulled the beer bread out of the oven. I was tuckered out, but I had gotten to everything on my to-do list!

Sooo now it’s finally the big day of the party! I am spending the morning getting the chili in the crock pot and hoping it stops pouring rain so I can go running; then it’s time to get the rest of the food prepared (these two fifths of Soco aren’t going to turn themselves into punch), and get myself prepared (this face isn’t going to drag-queen-makeup itself).

I always have the The Office or SVU on in the background while I’m working in the kitchen too! And that cake is adorable – have a great time tonight!!
