Hump Day Treat: Spring Fling Bark

I love white chocolate. (I am white chocolate.) I love making peppermint bark at the holidays, but it’s sad that this great treat comes but once a year. So I decided…like Jesus, it’s coming again at Easter!

And for all you girls who prefer dark chocolate…

dark chocolate I’ve got some of that too!

This recipe was inspired by Leah’s coconut chocolate along with a recipe I saw in the newspaper. I put it all together and came up with this! The best part about it? It was a good way for me to use up some of this leftover Easter candy…

Besides the candy, you need white chocolate or dark chocolate. You also need sweetened coconut, coconut oil, and food coloring.

For the first batch, I used Baker’s white chocolate squares. Start by melting the chocolate in the microwave. It takes about two minutes and you want to stir every 30 seconds or so. Stir in about a teaspoon of coconut oil before the last 30 seconds.

Pour the melted chocolate on a baking sheet lined with wax paper and add a drop of food coloring; swirl it with a toothpick to get a marbled effect. (Use a very light hand to keep the colors pastel and spring-like.)

Then I just sprinkled the melted chocolate with coconut and topped it with candy.

The spring M & Ms were great, but I also made some with chopped Starburst, Kit Kats, Reese’s Peanut Butter Cups, and Butterfingers. Then I moved onto to the dark chocolate! I melted down a dark chocolate bar, but if you received a giant chocolate bunny in your Easter basket, you could totally murder it for the cause.

I realized that it made more sense to add the coconut to the melted chocolate before pouring it on the pan, so that’s what I did the second time. (And I added a lot of coconut.) Then I topped it with the candy!

I also included a decapitated bunny or two…

Then I just put everything in the fridge for about an hour and when it had hardened, snapped it all apart.

HEYOH SPRING!

This was so great! It’s sweet, savory, crunchy, creamy, coconut-y…pretty much everything I look for in a treat! I wasn’t sure about the Starburst on chocolate, but I loved how that turned out!
