Good Tuesday evening!
I must say, I am writing this so delightfully full and happy. I know there have been a lot of foodgasms over the past few days; I feel sort of bad. It’s like I got a new boyfriend who, to quote Lil Kim, has a mouth like a hurricane, and I’m walking around in a constant state of honeymoon period bliss. Except with food.
Today has been a pretty good day, despite the fact that I had to run errands. I hate running errands so much, especially when they involve a trip to the Post Office, but the great weather made up for it. I also squeezed in a 30-minute walk on the trails near my house. Days like this are days when I must say walking > running. I didn’t get my hair all sweaty, but I definitely worked up a sweat (much to my dismay when I raised my arms a little later). I love how I can feel the difference walking outside makes in my butt, thighs, and calves, more than any other exercise!
Today I was flipping through the new issue of Food and Wine and saw a blurb about some sausages. I knew immediately that I wanted sausage for dinner, and I bought some local and organic Italian brats from Black Oak Farms on my recent grocery extravaganza! I didn’t even know I liked brats; normally, when I think of brats, I think of those whore toys.
But I knew it was time for real brats to be in my life more! For some reason, I was envisioning them grilled with some red peppers. Enter Nutritionista’s Spicy Pepper Poppers. I decided to take it up a notch by grilling the red peppers before stuffing them. It was a girl on grill kinda night!
The thing I love about grilling is that it requires such little prep. There’s no pre-heating and there’s really no clean-up. So this was a pretty quick dinner!
Once the peppers were done I topped two halves with spinach, crushed red pepper, Mrs. Dash’s extra spicy blend, and an ounce of raw milk cheddar and then popped it in the microwave so the cheese could melt.
Um, do this now. Seriously, even if you can’t grill them first, this is an amazing snack or side dish. However, if you can grill them, it’s so worth it; the flavor was incredible.
Actually, the whole dinner was incredible!
A brat, the cheesy pepper, and bread with butter. I also had a big green salad with balsamic vinegar.
I didn’t even know I liked brats, but this was amazing! It was so spicy with a great black pepper flavor. The whole dinner was spicy and totally satisfying and it was a perfect light dinner for a warm night. I’m really happy I made double of everything because I’m already looking forward to lunch tomorrow.
I don’t know about you guys, but spicy foods always make me want a sweet dessert. However, I’m trying to keep an eye on my sugar for this week’s Outside the Box Challenge (everyone agrees it’s the hardest one yet!) and I don’t need to eat a square of bacon-infused chocolate every night, as is becoming my habit lately. Still, I needed something to feel that “and now dinner is done” feeling so I turned to an old stand-by: dark chocolate chips! Seriously, just having about five is usually enough to make me feel done. When I studied abroad, I used to get this fix by having a Snickers bar so I think the dark chocolate chips are a pretty solid upgrade!
Mmm…I’m like so deeply satisfied by that meal. I’m letting it digest and then doing 20 minutes of Core Fusion. I can’t believe the April Core Fusion Challenge 2.0 is nearing the end. Last night I did pilates and glutes before spinning which was a huge mistake; I could barely keep up and, well, I’m the instructor. And I still swear a lot during the arms segments, but hey…it’s all part of the process!
