Rachel Getting Hungry: Cranberry & Leek Chicken Fried Rice

by Rachel on January 25, 2011

Are you already thinking about your next meal? Yeah…I’m the same way. Right after one is finishing, I’m already thinking about the next.

It’s a bad habit, but at least I’ve stopped applying it to guys.

Anyway, if, like me, you’re just finishing lunch and already wondering what to make for dinner tonight, have no fear! I’ve got your dinner recipe and it is fantastic.

I wanted to cook something on Sunday night that would be good to have for lunch this week, so I went with Mark Bittman’s fried rice recipe in the new Cooking Light. I made one swap: half the cranberries, plus 1/4 cup of almonds, which turned out to be a good choice. (I think it would have been too sweet otherwise.)

How good of a choice was it?

Well…despite my intention of having it for lunch this week, my darling boyfriend enjoyed it so much that he left me without enough leftovers to actually make a sufficient lunch, so yesterday I ended up leaving the sad portion in the office fridge and going to Subway.

So there ya go.

I love cranberries in anything. Ryan tends not to like sweet and savory combos, so I don’t get it nearly often enough (TWSS).

I 100% agree with putting on work out clothes befor eyou leave work. I did this even when I was going HOME to run, but it was a way to make sure I didn’t skip out in favor of the couch!

And now, instead, I just work out in the morning. I never know what my work day will look like and I hated feeling rushed at night. Morning workouts leave me refreshed for the day!

Haha, I love Eric! Cooking Light is the best, isn’t it? Was actually reading Mark Bitman’s article in the latest Bon Appetit issue the other day. He’s one smart guy ;)
Btw, I’m hosting a giveaway for a great healthy cookbook. Check it out if you’re interested :)

Mark Bittman can do no wrong (along with Ina Garten, IMOH)! Thanks for posting a pic and making the recipe look extra-enticing!

Leeks are really delicious and not so well known in the U.S., although they should be. I love it when I make something delicious and my bf closes his eyes whilst eating it. THEN I know I’ve succeeded.
