The #1 Thing You Should Do This Memorial Day Weekend

It’s a three-day weekend!

I have one bit advice for you this holiday…

Use this recipe from Eat, Live, Run…and then add a quarter-cup of diced red onion, a diced red pepper, and a few pinches of sugar.

Take it to a BBQ on Monday.

Or make it for yourself and eat it on everything.

You could eat it on juicy burgers with pepper jack cheese, as I did at lunch today when I had my coworkers over.

Or you could just eat it with a spoon.

Seriously…it’s that good. I’m going to make a double serving next time.

(And next time will probably be…tomorrow.)

Yum! I’m not usually a salsa gal, but that salsa looks amazing. I don’t know if I have any BBQs planned, but I could see if I could make it for my cousin’s graduation…

I know its not Memorial Day anymore but I still plan on making that salsa!

That salsa looks delicious Rachel. I love making homemade salsas and dips, especially when the weather is cooperating which it finally IS here in Boston : )

I make a similar salsa, but throw in some fresh mango. It’s to die for. Something about the avocado-mango combo gets me every time! Hope you had a lovely weekend.
